The short version

Both are symmetrical, but the Razer Viper V3 HyperSpeed is 19 mm longer (127.1 × 63.9 × 39.9 mm vs 108 × 62.6 × 38.5 mm). By length that is large against small. The Razer Orochi V2 is 22 g lighter (82 g vs 60 g). The Razer Viper V3 HyperSpeed uses the newer Focus Pro 30K Optical Sensor, tracks to a higher maximum DPI (30,000 vs 18,000), and polls faster (8,000 Hz vs 1,000 Hz). At 1,000 Hz, Razer claims 280 hours for the Viper V3 HyperSpeed and 445 hours for the Orochi V2, so the Orochi V2 lasts longer on paper. The Razer Viper V3 HyperSpeed came out about 2 years later (September 2023 vs April 2021). In our rankings the Razer Viper V3 HyperSpeed is #22 overall and the Razer Orochi V2 is #32.
